The meal consists of several courses: a seasonal appetizer (otoshi), soup, assorted dishes, Hida-style grilled wagyu beef on hōba leaf, a rice course, and a dessert.
Each item is thoughtfully prepared using ingredients that are in their shun—the season when they are at their freshest, most flavorful, and most nutritious.
In Japan, there is a deep-rooted cultural tradition of enjoying the blessings of nature and the changing seasons through food.
To “taste the season” is considered an essential expression of Japanese hospitality.

Many of our drinks are locally produced in Nagano Prefecture, allowing you to enjoy both Japanese culture and the unique flavors of Nagano through your drink.
